Turkey Breast rolls with home-made guacamole

· Black pepper
· 1 spring onion
· 2 medium tomatoes
· Extra virgin olive oil
HOW TO MAKE IT
Make the guacamole by mashing the avocado (peeled and stoned) in a mortar with a drizzle of lime juice, a pinch of salt and pepper.
- Dice the spring onion and tomato, mix and season with salt and oil. Set aside.
- Open out a slice of our Turkey Breast Extraordinarios and spread the middle with a layer of guacamole.
- Roll up the slice and serve on a plate with the other prepared rolls.
- Sprinkle with the diced spring onion and tomato mix, along with a pinch of chopped coriander. Enjoy!
